  1. Prepare the beef mixture
    Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant. Add ground beef and break it apart with a wooden spoon. Cook for 7-8 minutes until browned, then drain excess fat.
  2. Season the beef
    Sprinkle the taco seasoning over the cooked beef and add 1/3 cup water. Stir well to combine. Add the drained black beans, reduce heat to low, and simmer for 5 minutes until slightly thickened. Remove from heat.
  3. Assemble the nachos
    Preheat oven to 375°F (190°C). Arrange tortilla chips in an even layer on a large, oven-safe platter or baking sheet. Spread the beef and bean mixture evenly over the chips, then sprinkle with shredded cheese.
  4. Bake the nachos
    Place the nachos in the preheated oven and bake for 5-7 minutes, or until the cheese is completely melted and starting to bubble. Keep a close eye on them to prevent burning.
  5. Add fresh toppings
    Remove nachos from the oven and immediately top with diced tomatoes, sliced black olives, and jalapeños.
  6. Finish and serve
    Add dollops of sour cream around the nachos. Sprinkle with diced avocado (or add small scoops of guacamole) and fresh cilantro. Serve immediately while still warm and the chips are crispy.
