Instructions

  1. Prepare the BBQ chicken
In a medium bowl, toss the shredded chicken with 3/4 cup of barbecue sauce until evenly coated. Reserve the remaining 1/4 cup of sauce for drizzling later.
  2. Arrange the chips
Preheat your oven to 375°F (190°C). Spread the tortilla chips in an even layer on a large, rimmed baking sheet or in a large oven-safe skillet. Make sure the chips overlap slightly but create a substantial base.
  3. Add toppings
Evenly distribute the BBQ chicken over the chips, followed by the black beans, corn, diced bell pepper, and half of the red onion. Sprinkle the shredded cheese over everything, making sure to cover the toppings evenly.
  4. Bake the nachos
Place the baking sheet in the preheated oven and bake for 10-15 minutes, until the cheese is completely melted and bubbling, and the edges of the chips begin to brown slightly.
  5. Add final touches
Remove the nachos from the oven and immediately drizzle with the remaining 1/4 cup of barbecue sauce. Top with the sliced jalapeños, remaining red onion, green onions, and chopped cilantro.
  6. Serve and enjoy
Serve the nachos hot with dollops of sour cream on top or on the side. For best results, serve immediately while the cheese is still melted and the chips are crispy.
