  1. Prepare the bread
    Lay out the bread slices on a clean work surface. Spread mayonnaise evenly on one side of each slice, and mustard on two of the slices that will be the bottom pieces of each sandwich.
  2. Cook the bologna
    Heat a non-stick skillet over medium heat. If desired, make small cuts around the edges of each bologna slice to prevent curling. Cook the bologna for 2-3 minutes per side until lightly browned and slightly crispy at the edges.
  3. Assemble the sandwich
    Place 3 slices of warm bologna on each of the two bottom bread slices. Top each with a slice of American cheese, 2 lettuce leaves, 2 tomato slices, and red onion slices if using. Sprinkle with black pepper.
  4. Complete the sandwich
    Place the remaining bread slices on top, mayonnaise side down. If desired, lightly butter the outside of each sandwich and toast in a pan until golden, about 2 minutes per side. Cut each sandwich diagonally and serve immediately.
