  1. Prepare the spread
    In a small bowl, mix the mayonnaise and Dijon mustard until well combined. This creates a tangy spread that complements the ham and cheese beautifully.
  2. Assemble the sandwich
    Lay out the bread slices on a clean work surface. Spread the mustard-mayonnaise mixture evenly on all four slices. Layer two slices with equal amounts of ham, followed by the Swiss cheese, tomato slices, lettuce, and red onion if using.
  3. Complete the sandwiches
    Top with the remaining bread slices, mustard-mayo side down. Gently press down to compact the sandwiches. If desired, sprinkle thyme leaves on the cheese before closing the sandwich for an aromatic touch.
  4. Toast the sandwiches
    Heat a large skillet over medium heat. Lightly butter the outside of each sandwich. Place the sandwiches in the skillet and cook for 2-3 minutes per side, until the bread is golden brown and the cheese begins to melt. For a non-grilled version, skip this step.
  5. Serve
    Cut the sandwiches diagonally and serve immediately while warm and the cheese is still melty. Pair with a side of potato chips, pickle spears, or a light salad for a complete meal.
