Instructions

  1. Prepare the durian
If using fresh durian, carefully cut open the fruit and scoop out the flesh, removing all seeds. If using frozen durian, thaw it until soft but still cold. Measure out 2 cups of the flesh.
  2. Blend the base
In a high-powered blender, combine the durian flesh, coconut milk, and condensed milk. Blend on medium speed until smooth and creamy, about 30-45 seconds.
  3. Add remaining ingredients
Add the crushed ice, whole milk (if using), honey or palm sugar, vanilla extract, and a pinch of salt to the blender. Blend again until the mixture is completely smooth and the ice is fully incorporated.
  4. Adjust consistency
Check the consistency of your smoothie. If it's too thick, add more milk or coconut milk, one tablespoon at a time, blending briefly after each addition until you reach your desired consistency.
  5. Taste and serve
Taste the smoothie and adjust sweetness if needed by adding more honey or condensed milk. Pour into chilled glasses, garnish with fresh mint leaves and toasted coconut flakes if desired. Serve immediately with a straw.
