Instructions

  1. Prepare the rice
Drain the soaked glutinous rice and rinse thoroughly under cold water. Place in a steamer lined with cheesecloth over boiling water. Cover and steam for 25-30 minutes until the rice is tender and translucent.
  2. Make coconut sauce
While the rice is cooking, combine 1 cup of coconut milk, 1/4 cup sugar, and 1/4 teaspoon salt in a small saucepan. Add pandan leaves if using. Heat gently until sugar dissolves, but do not boil. Remove from heat and set aside.
  3. Season the sticky rice
Transfer the cooked sticky rice to a large bowl. Pour the warm coconut sauce over the rice and gently fold to combine. Cover with a damp cloth and let it rest for 20 minutes to absorb the flavors.
  4. Prepare durian sauce
In a separate saucepan, combine the remaining 1/2 cup coconut milk, 1/4 cup sugar, and 1/4 teaspoon salt. Bring to a gentle simmer. Add the durian flesh and mash slightly with a fork. Stir in the cornstarch mixture and cook until slightly thickened, about 3-5 minutes. Remove from heat.
  5. Serve the dessert
If using banana leaves, place a portion of sticky rice on each leaf. Otherwise, divide the sticky rice among serving plates. Top with the durian sauce, drizzle with coconut cream, and sprinkle with toasted sesame seeds or mung beans.
