Instructions

  1. Prepare the coconut
If using a fresh young coconut, carefully open it, drain and reserve the coconut water, then scoop out the soft meat. Cut the coconut meat into smaller pieces for easier blending.
  2. Combine the ingredients
In a blender, add the coconut meat, coconut water, sweetened condensed milk, ice cubes, vanilla extract, and sugar (if using). If you're adding lime juice for a touch of acidity, add it now.
  3. Blend until smooth
Blend all ingredients on high speed for about 1-2 minutes until the mixture is completely smooth and creamy. The consistency should be similar to a milkshake. If it's too thick, add more coconut water; if too thin, add more ice or coconut meat.
  4. Add the finishing touches
Pour in the coconut cream and pulse a few times to incorporate. This adds an extra layer of richness and creaminess to the smoothie.
  5. Serve and garnish
Pour the smoothie into tall glasses. Top with toasted coconut flakes and a sprig of fresh mint. For a more indulgent version, you can drizzle additional condensed milk on top.
