Vietnamese Coconut Smoothie
A creamy, refreshing tropical blend with coconut and condensed milk
Ingredients
Instructions
-
Prepare the coconutIf using a fresh young coconut, carefully open it, drain and reserve the coconut water, then scoop out the soft meat. Cut the coconut meat into smaller pieces for easier blending.
-
Combine the ingredientsIn a blender, add the coconut meat, coconut water, sweetened condensed milk, ice cubes, vanilla extract, and sugar (if using). If you're adding lime juice for a touch of acidity, add it now.
-
Blend until smoothBlend all ingredients on high speed for about 1-2 minutes until the mixture is completely smooth and creamy. The consistency should be similar to a milkshake. If it's too thick, add more coconut water; if too thin, add more ice or coconut meat.
-
Add the finishing touchesPour in the coconut cream and pulse a few times to incorporate. This adds an extra layer of richness and creaminess to the smoothie.
-
Serve and garnishPour the smoothie into tall glasses. Top with toasted coconut flakes and a sprig of fresh mint. For a more indulgent version, you can drizzle additional condensed milk on top.
