Warm the tortillasBriefly warm the tortillas in a dry skillet over medium heat for about 10 seconds on each side, or microwave for 10-15 seconds until pliable but not crisp.

Assemble the wrapsLay the tortillas flat on a clean work surface. Spread the mayonnaise-mustard mixture evenly over each tortilla, leaving a half-inch border around the edges.

Add the fillingsLayer each tortilla with spinach leaves, turkey slices, bacon strips, avocado slices, tomato slices, and red onion. Sprinkle with chopped cilantro if using.

Roll the wrapsFold in the sides of each tortilla, then roll tightly from the bottom up, tucking in the sides as you go to create a secure wrap.
