  1. Prepare the spread
    In a small bowl, combine mayonnaise and Dijon mustard. Mix well until smooth and set aside.
  2. Prepare the avocado
    Peel and slice the avocado. Sprinkle with lime juice to prevent browning and season with a pinch of salt and pepper.
  3. Warm the tortillas
    Briefly warm the tortillas in a dry skillet over medium heat for about 10 seconds on each side, or microwave for 10-15 seconds until pliable but not crisp.
  4. Assemble the wraps
    Lay the tortillas flat on a clean work surface. Spread the mayonnaise-mustard mixture evenly over each tortilla, leaving a half-inch border around the edges.
  5. Add the fillings
    Layer each tortilla with spinach leaves, turkey slices, bacon strips, avocado slices, tomato slices, and red onion. Sprinkle with chopped cilantro if using.
  6. Roll the wraps
    Fold in the sides of each tortilla, then roll tightly from the bottom up, tucking in the sides as you go to create a secure wrap.
  7. Slice and serve
    Cut each wrap diagonally in half with a sharp knife. Serve immediately or wrap tightly in parchment paper or plastic wrap if taking to go.
