  1. Prepare the aromatics
    Heat the sesame oil in a large pot over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant, being careful not to burn them.
  2. Add the broth
    Pour the vegetable broth into the pot and bring it to a gentle simmer. Add the soy sauce, rice vinegar, and white pepper. Let it simmer for 5 minutes to allow the flavors to meld together.
  3. Add the tofu
    Carefully add the cubed tofu to the simmering broth. Gently stir to ensure the tofu is submerged. Simmer for 5 more minutes, being careful not to break the tofu pieces.
  4. Incorporate the spinach
    Add the chopped spinach to the soup and stir gently. The spinach will wilt quickly in the hot broth. If using the cornstarch slurry for a slightly thicker soup, add it now, stirring continuously until the soup thickens slightly.
  5. Season and finish
    Taste the soup and adjust the seasoning with salt if needed. Let the soup simmer for another 2-3 minutes to ensure everything is heated through and the flavors are well combined.
  6. Serve
    Ladle the hot soup into bowls and garnish with sliced green onions. Serve immediately for the best flavor and texture.
