Prepare the brothIn a large pot, combine vegetable broth, miso paste, soy sauce, sesame oil, grated ginger, and minced garlic. Bring to a simmer over medium heat, stirring occasionally to ensure the miso dissolves completely. Simmer for 10 minutes to allow flavors to meld.

Cook the tofuWhile the broth simmers, heat 1 tablespoon of oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook for 2-3 minutes on each side until golden brown and crispy. Remove from heat and set aside.

Prepare the vegetablesAdd the sliced shiitake mushrooms and julienned carrots to the simmering broth. Cook for 5 minutes until vegetables begin to soften. Then add the chopped bok choy and continue to simmer for another 2 minutes until tender but still crisp.

Cook the noodlesIn a separate pot, cook the ramen noodles according to package instructions, usually 2-3 minutes until al dente. Drain well and divide among four serving bowls.

Assemble the ramen bowlsLadle the hot broth with vegetables over the noodles in each bowl. Arrange the crispy tofu, bean sprouts, and green onions on top. If using, add half a soft-boiled egg and some nori strips to each bowl.

Garnish and serveGarnish with additional green onions and a drizzle of chili oil if desired. Serve immediately while hot, with chopsticks and a soup spoon for the full ramen experience.
