  1. Prepare the tofu
    Remove tofu from packaging and drain well. Using paper towels or a clean kitchen towel, press the tofu to remove excess water. Crumble the tofu into bite-sized pieces, resembling scrambled eggs.
  2. Sauté the vegetables
    Heat olive oil in a large non-stick skillet over medium heat. Add diced onion and bell pepper, sautéing for 3-4 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Add the tofu and seasonings
    Add the crumbled tofu to the skillet. Sprinkle with turmeric, cumin, smoked paprika, and nutritional yeast. Stir well to coat the tofu evenly with the spices, giving it a golden yellow color.
  4. Cook the scramble
    Pour in the plant milk and stir to combine. Cook for 5-7 minutes, stirring occasionally, until the liquid is mostly absorbed and the tofu is heated through. The scramble should be moist but not watery.
  5. Season and finish
    Add black salt (for an eggy flavor) or regular salt, black pepper, and stir in chopped spinach if using. Cook for another minute until spinach is wilted. Taste and adjust seasonings as needed.
  6. Serve
    Remove from heat and garnish with fresh chopped chives. Serve immediately with toast, roasted potatoes, avocado, or your favorite breakfast sides.
