Creamy Thai coconut soup with silken tofu and exotic flavors

Prepare the broth baseIn a large pot, combine coconut milk and vegetable broth over medium heat. Add galangal, lemongrass, and kaffir lime leaves. Bring to a gentle simmer (do not boil) and cook for 10 minutes to infuse the flavors.

Add the aromaticsAdd sliced Thai chilies and mushrooms to the broth. Simmer for 5 minutes until the mushrooms are tender but still maintain their texture.

Incorporate the tofuGently add the cubed silken tofu and red bell pepper to the soup. Cook for another 5 minutes, being careful not to stir too vigorously as silken tofu is delicate and can break apart easily.

Season the soupAdd lime juice, soy sauce, and palm sugar. Stir gently to combine. Taste and adjust seasonings if needed - the soup should have a perfect balance of sour, salty, and slightly sweet flavors.

Remove inedible aromaticsRemove the galangal slices, lemongrass pieces, and kaffir lime leaves from the soup. These were used for flavor but are not meant to be eaten.

Garnish and serveTurn off the heat and stir in half of the cilantro. Ladle the soup into bowls and garnish with remaining cilantro and green onions. Serve immediately while hot.
