
Shumai Dumplings
Steamed open-faced dumplings with savory pork and shrimp filling

Prepare the fillingIn a large mixing bowl, combine the ground pork, chopped shrimp, scallions, ginger, sesame oil, soy sauce, sugar, and white pepper. Mix thoroughly until well combined.

Add binding ingredientsAdd the egg white and cornstarch to the mixture. Stir well until the mixture becomes sticky and holds together. This will help bind the filling during steaming. Cover and refrigerate for 15 minutes to allow flavors to meld.

Form the dumplingsPlace a wonton wrapper flat on your palm or work surface. Spoon about 1 tablespoon of filling into the center of the wrapper. Gently fold the edges of the wrapper up around the filling, leaving the center exposed, creating the characteristic open-faced shumai shape. The filling should be visible from the top.

Add garnishPress a few peas and a small piece of diced carrot onto the exposed filling of each dumpling for color and flavor contrast. This traditional garnish also adds visual appeal to the finished dumplings.

Prepare steamerLine a bamboo steamer or metal steaming tray with parchment paper or cabbage leaves to prevent sticking. Arrange the prepared shumai dumplings in the steamer, spacing them about 1 inch apart to allow for expansion during cooking.

Steam the dumplingsFill a wok or large pot with water to a depth of about 2 inches and bring to a boil. Place the steamer over the boiling water, making sure the water doesn't touch the dumplings. Cover and steam for 8-10 minutes until the filling is cooked through and the wrappers become translucent.

ServeCarefully remove the dumplings from the steamer and transfer to a serving plate. Serve immediately while hot with a dipping sauce made from equal parts soy sauce, rice vinegar, and a few drops of chili oil if desired.
