  1. Prepare the filling
    In a large mixing bowl, combine ground meat, crumbled tofu, chopped cabbage, chives, garlic, ginger, soy sauce, and sesame oil. Mix thoroughly with your hands until well incorporated.
  2. Add vegetables
    Fold in the chopped shiitake mushrooms and grated carrot. Season with salt and pepper. Mix gently until all ingredients are evenly distributed throughout the filling.
  3. Fill the dumplings
    Place a dumpling wrapper on your palm. Spoon about 1 tablespoon of filling into the center. Brush the edges with beaten egg, then fold the wrapper in half to create a half-moon shape. Pinch the edges firmly to seal, creating pleats along the edge if desired for a traditional look.
  4. Steam the mandu
    Line a steamer basket with parchment paper or cabbage leaves. Arrange the dumplings in the basket, ensuring they don't touch each other. Steam over medium-high heat for 8-10 minutes until the filling is cooked through and the wrappers are translucent.
  5. Pan-fry (optional)
    For crispy bottomed dumplings (gunmandu), heat 1 tablespoon of oil in a non-stick pan over medium heat. Place the dumplings flat-side down and cook until golden brown, about 2-3 minutes. Add 1/4 cup water, cover with a lid, and steam for an additional 3-4 minutes until the water evaporates.
  6. Prepare dipping sauce
    While the dumplings cook, make a simple dipping sauce by combining 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and a pinch of red pepper flakes in a small bowl. Add minced garlic and chopped green onions if desired.
  7. Serve
    Transfer the cooked mandu to a serving plate. Serve hot with the dipping sauce on the side. Garnish with chopped green onions and toasted sesame seeds if desired.
