  1. Prepare the pork belly
    Pat the pork belly slices dry with paper towels. If using soju, lightly brush it over the meat for flavor enhancement. Set aside at room temperature for about 10 minutes.
  2. Make the ssamjang sauce
    In a small bowl, combine gochujang, doenjang, honey, 1 minced garlic clove, and 1 teaspoon of sesame oil. Mix well until smooth. Set aside to let the flavors meld.
  3. Prepare the vegetables
    Arrange the lettuce leaves, perilla leaves, sliced garlic, and green chilies on a large platter. These will be used for wrapping the cooked pork belly.
  4. Grill the pork belly
    Heat a grill pan or Korean BBQ grill plate over medium-high heat. Once hot, place the pork belly slices on the grill and cook for about 3-4 minutes per side until golden brown and crispy. Cut the grilled pork into bite-sized pieces with scissors.
  5. Serve and eat
    To eat, take a lettuce leaf, add a small spoonful of rice, a piece of grilled pork belly, a perilla leaf, some sliced garlic and chili, a dollop of ssamjang sauce, and sprinkle with sesame seeds. Wrap it all up and enjoy in one bite.
