  1. Prepare the marinade
    In a large bowl, combine hoisin sauce, honey, Shaoxing wine, soy sauce, oyster sauce, five-spice powder, sesame oil, brown sugar, minced garlic, and red food coloring (if using). Whisk until well combined and sugar is dissolved.
  2. Marinate the pork
    Add the pork strips to the marinade, ensuring each piece is well coated. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, turning occasionally for even marination.
  3. Prepare for roasting
    Preheat oven to 425°F (220°C). Line a baking tray with foil and place a wire rack on top. Remove pork from marinade, reserving the marinade. Place the pork strips on the wire rack.
  4. Roast the pork
    Roast for 20 minutes, then reduce temperature to 375°F (190°C). Brush the pork with reserved marinade and flip pieces over. Continue roasting for another 20-25 minutes, basting and turning every 10 minutes until caramelized and internal temperature reaches 145°F (63°C).
  5. Create the final glaze
    While the pork is roasting, pour the remaining marinade into a small saucepan. Add 2 tablespoons of honey and bring to a simmer over medium heat. Cook for about 5 minutes until slightly thickened.
  6. Finish with glaze
    During the last 5 minutes of roasting, brush the pork generously with the thickened glaze. Return to oven for the final caramelization.
  7. Rest and slice
    Remove the char siu from the oven and let rest for 10 minutes. Slice thinly across the grain and arrange on a serving platter. Drizzle with any remaining glaze before serving.
