  1. Prepare the shrimp filling
    Coarsely chop about 2/3 of the shrimp, leaving the remaining 1/3 whole for texture. In a mixing bowl, combine all shrimp with the rice wine, grated ginger, sesame oil, sugar, 1/2 teaspoon salt, white pepper, and chopped bamboo shoots. Mix well and refrigerate for 30 minutes to marinate.
  2. Make the dough
    In a heatproof bowl, combine the wheat starch and tapioca starch. Slowly pour in the boiling water while stirring rapidly with chopsticks or a wooden spoon. Add the vegetable oil and continue stirring until a rough dough forms. Transfer to a work surface and knead for 2-3 minutes until smooth and elastic. Cover with a damp cloth to prevent drying.
  3. Form the dumplings
    Divide the dough into small portions (about 20g each). Roll each portion into a ball, then flatten with your palm. Using a small rolling pin, roll out each piece into a 3-inch round, making the edges thinner than the center. Place about 1 tablespoon of filling in the center of each wrapper. Pleat the edges to form the traditional har gow shape by making 10-12 small folds around the edge while sealing the dumpling.
  4. Prepare the steamer
    Line a bamboo steamer with parchment paper or cabbage leaves to prevent sticking. Arrange the dumplings in the steamer, leaving about 1 inch between each dumpling as they will expand during cooking.
  5. Steam the dumplings
    Bring water to a boil in a wok or pot that can accommodate your steamer. Place the steamer over the boiling water, ensuring the water doesn't touch the dumplings. Cover and steam for 6-8 minutes until the dumplings are translucent and the filling is cooked through.
  6. Serve
    Carefully remove the dumplings from the steamer using a spatula or chopsticks. Serve immediately with soy sauce, Chinese black vinegar, or chili oil for dipping.
