
Chinese Steamed Rice Rolls

Prepare the rice batterIn a large mixing bowl, combine rice flour, tapioca starch, and salt. Gradually add water while whisking to prevent lumps. Add 1 tablespoon vegetable oil and mix well. Strain the mixture through a fine sieve to remove any lumps. Let the batter rest for 15 minutes.

Prepare the filling (if using)If using a filling, mix ground pork or chopped shrimp with chopped scallions, 1 tablespoon soy sauce, and sesame oil in a bowl. Set aside.

Set up steaming stationPrepare a steamer by bringing water to a boil in a wok or pot. Use a flat, shallow pan (approximately 8×8 inches) that will fit inside your steamer. Lightly brush the pan with oil.

Steam the rice rollsPour about 1/4 cup of batter into the oiled pan, tilting to create a thin, even layer. If using filling, sprinkle a thin line of it across the center of the batter. Place the pan in the steamer, cover with lid, and steam for 2-3 minutes until the rice sheet is translucent and fully cooked.

Roll and removeRemove the pan from the steamer. Using a flexible spatula or dough scraper, carefully loosen the edges of the rice sheet. Starting from one side, gently roll up the rice sheet. Transfer to a serving plate. Repeat the process with remaining batter and filling.

Prepare the dipping sauceIn a small bowl, combine light soy sauce, oyster sauce, and sugar. Stir until sugar is dissolved. For extra flavor, you can add a few drops of sesame oil or a small amount of chili oil if desired.

ServeCut the rice rolls into 2-inch segments. Drizzle with dipping sauce or serve the sauce on the side. Garnish with additional chopped scallions if desired. Serve immediately while still warm.
