  1. Prepare the yogurt base
    In a large mixing bowl, whisk the Greek yogurt until smooth and creamy. If the yogurt is too thick, add 2 tablespoons of cold water to achieve a medium-thick consistency.
  2. Prepare the tempering
    Heat the vegetable oil in a small pan over medium heat. Add the cumin seeds and let them splutter for about 30 seconds until aromatic. Remove from heat and let it cool for 2 minutes.
  3. Combine fresh ingredients
    Add the diced pineapple, cucumber, chopped mint, cilantro, and green chili (if using) to the yogurt. Mix gently to combine all ingredients evenly.
  4. Season the raita
    Add the red chili powder, chaat masala, salt, and honey (if using) to the yogurt mixture. Pour the cooled cumin tempering over the raita. Mix everything thoroughly.
  5. Chill and serve
    Cover the bowl and refrigerate the raita for at least 30 minutes to allow the flavors to meld together. Stir once more before serving, and garnish with a sprinkle of chaat masala and a few mint leaves.
