  1. Prepare the yogurt
    In a large mixing bowl, whisk the yogurt until smooth and creamy. If using regular yogurt, you may want to strain it through a cheesecloth for 30 minutes to achieve a thicker consistency.
  2. Prepare the vegetables
    Finely chop the red onion and rinse under cold water for 30 seconds to reduce the sharp flavor. Pat dry with a paper towel. If using cucumber, peel, deseed, and dice into small pieces. Finely chop the green chili and cilantro leaves.
  3. Season the yogurt
    Add the roasted cumin powder, red chili powder, chaat masala (if using), and salt to the yogurt. Mix well to combine. Add the lemon juice and stir again.
  4. Combine all ingredients
    Add the chopped onions, cucumber (if using), green chili, and most of the cilantro to the seasoned yogurt. Gently fold everything together until well combined.
  5. Chill and serve
    Cover the raita and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, give it a gentle stir, then transfer to a serving bowl. Garnish with the remaining cilantro and a sprinkle of roasted cumin powder.
