Ingredients
Instructions
-
Prepare the yogurtIn a large mixing bowl, whisk the yogurt until smooth and creamy. If using regular yogurt, you may want to strain it through a cheesecloth for 30 minutes to achieve a thicker consistency.
-
Prepare the vegetablesFinely chop the red onion and rinse under cold water for 30 seconds to reduce the sharp flavor. Pat dry with a paper towel. If using cucumber, peel, deseed, and dice into small pieces. Finely chop the green chili and cilantro leaves.
-
Season the yogurtAdd the roasted cumin powder, red chili powder, chaat masala (if using), and salt to the yogurt. Mix well to combine. Add the lemon juice and stir again.
-
Combine all ingredientsAdd the chopped onions, cucumber (if using), green chili, and most of the cilantro to the seasoned yogurt. Gently fold everything together until well combined.
-
Chill and serveCover the raita and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, give it a gentle stir, then transfer to a serving bowl. Garnish with the remaining cilantro and a sprinkle of roasted cumin powder.
