
Pastrami Reuben Sandwich
Classic deli sandwich with hot pastrami, Swiss cheese & sauerkraut

Prepare the Russian dressingIf making homemade Russian dressing, combine 1/4 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon horseradish, 1 teaspoon Worcestershire sauce, and a dash of hot sauce in a small bowl. Mix well and set aside.

Prepare the sauerkrautPlace the sauerkraut in a fine-mesh strainer and press down with paper towels to remove excess moisture. Transfer to a small saucepan and warm over medium-low heat for about 3 minutes, stirring occasionally.

Warm the pastramiIn a large skillet over medium heat or in the microwave, warm the pastrami slices until heated through but not crisp, about 2-3 minutes. Keep warm and set aside.

Assemble the sandwichesLay out the 8 bread slices on a work surface. Spread the outside of each slice with softened butter. Flip the slices and spread 4 of them with Russian dressing and the other 4 with Dijon mustard. On the Russian dressing sides, layer equal portions of warmed pastrami, then sauerkraut, caraway seeds (if using), black pepper, and finally Swiss cheese. Top with the remaining bread slices, mustard side down.

Grill the sandwichesHeat a large skillet or griddle over medium heat. Place the sandwiches on the hot surface and cook until the bread is golden brown and crispy, about 3-4 minutes. Carefully flip the sandwiches and cook the other side until golden brown and the cheese is completely melted, about 3 minutes more.

Serve hotTransfer the grilled sandwiches to a cutting board and let rest for 1 minute. Slice each sandwich diagonally and serve immediately with pickle spears on the side.
