  1. Prepare the bread
    Spread the outside of each bread slice with softened butter. This will create a crispy golden exterior when grilled. Spread Dijon mustard on the inside of two slices.
  2. Make Russian dressing
    In a small bowl, combine Russian dressing and pickle relish. Mix well and set aside. If you don't have Russian dressing, you can substitute with a mixture of mayonnaise and ketchup.
  3. Layer the sandwich
    On the mustard-spread side of two bread slices, layer half the pastrami, then a slice of Swiss cheese, a spoonful of sauerkraut, another slice of cheese, and finally the remaining pastrami. Sprinkle with black pepper and caraway seeds if using. Spread the Russian dressing mixture on the inside of the remaining bread slices and place them dressing-side down to complete the sandwiches.
  4. Grill the sandwich
    Heat a large skillet or griddle over medium heat. Place the sandwiches on the hot surface and cook for 3-4 minutes on each side, pressing down occasionally with a spatula, until the bread is golden brown and crispy and the cheese is completely melted.
  5. Serve hot
    Remove the sandwiches from the heat, cut diagonally, and serve immediately while hot and cheese is still melty. Pair with pickle spears and kettle chips for a complete deli experience.
