
Montreal Smoked Meat Sandwich
Classic Canadian deli sandwich with tender smoked brisket

Prepare the meatIn a large skillet, heat the vegetable oil over medium heat. Add the thinly sliced smoked meat and warm for 3-4 minutes, occasionally turning the slices with tongs. If the meat is in larger pieces, you can steam it first and then slice it thinly against the grain.

Toast the breadSpread a thin layer of butter on one side of each bread slice. Place the bread butter-side down in a clean skillet over medium heat and toast until golden brown, about 2 minutes. Remove from heat.

Assemble the sandwichSpread yellow mustard on the untoasted side of four bread slices. If using mayonnaise, spread it on the untoasted side of the remaining four slices. Layer approximately 4 ounces of warm smoked meat on each mustard-spread slice. Add Swiss cheese (if using).

Add the toppingsTop the meat with a generous amount of sauerkraut and caramelized onions if using. Place pickle slices alongside the meat.

Complete the sandwichesClose each sandwich with the remaining bread slices, toasted side out. Cut diagonally with a sharp knife and serve immediately with additional pickles on the side and extra mustard if desired.
