
Moroccan Lamb Flatbreads
Spiced ground lamb on warm flatbreads with cooling yogurt sauce

Prepare the yogurt sauceIn a small bowl, combine the Greek yogurt, chopped mint, lemon juice, and a pinch of salt. Mix well, cover, and refrigerate until ready to serve.

Cook the aromaticsHeat olive oil in a large skillet over medium heat. Add the diced onion and cook for 5-6 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.

Brown the lambAdd the ground lamb to the skillet, breaking it up with a wooden spoon. Cook for 7-8 minutes until browned and no longer pink. Drain excess fat if necessary.

Add the spicesStir in the cumin, coriander, paprika, cinnamon, cayenne pepper (if using), and tomato paste. Season with salt and pepper. Cook for 2-3 minutes until the spices are fragrant and well incorporated.

Warm the flatbreadsHeat the flatbreads according to package instructions, or warm them in a dry skillet for 30 seconds per side until soft and pliable.

Assemble the flatbreadsSpread the spiced lamb mixture evenly over the warm flatbreads, leaving a small border around the edges.

Add the yogurt toppingDrizzle the mint yogurt sauce over the lamb or serve it on the side for dipping. Garnish with additional fresh mint if desired.

ServeCut the flatbreads into quarters or halves and serve immediately while still warm. Offer extra yogurt sauce on the side.
