  1. Prepare the dough
    In a large bowl, combine the flour, yeast, sugar, and salt. Make a well in the center and add the warm water and 3 tablespoons of olive oil. Mix until the dough comes together, then knead on a floured surface for 8-10 minutes until smooth and elastic.
  2. Let the dough rise
    Place the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
  3. Prepare the za'atar topping
    While the dough is rising, mix the za'atar spice blend with ¼ cup of extra virgin olive oil in a small bowl to form a spreadable paste. Set aside.
  4. Shape the manakish
    Preheat the oven to 400°F (200°C). Punch down the risen dough and divide into 6 equal portions. Shape each portion into a ball, then flatten and stretch into a 6-inch circle on a floured surface.
  5. Add toppings
    Place the dough circles on baking sheets lined with parchment paper. Use your fingertips to make small indentations all over the surface. Spread a generous amount of the za'atar mixture over each flatbread. If using additional toppings like feta cheese or tomatoes, add them now.
  6. Bake
    Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the bread is cooked through.
  7. Serve
    Remove from the oven and let cool slightly. Garnish with fresh mint leaves if desired. Serve warm as a breakfast item or appetizer.
