Prepare the doughIn a large bowl, combine the flour, yeast, sugar, and salt. Make a well in the center and add the warm water and 3 tablespoons of olive oil. Mix until the dough comes together, then knead on a floured surface for 8-10 minutes until smooth and elastic.

Let the dough risePlace the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare the za'atar toppingWhile the dough is rising, mix the za'atar spice blend with ¼ cup of extra virgin olive oil in a small bowl to form a spreadable paste. Set aside.

Shape the manakishPreheat the oven to 400°F (200°C). Punch down the risen dough and divide into 6 equal portions. Shape each portion into a ball, then flatten and stretch into a 6-inch circle on a floured surface.

Add toppingsPlace the dough circles on baking sheets lined with parchment paper. Use your fingertips to make small indentations all over the surface. Spread a generous amount of the za'atar mixture over each flatbread. If using additional toppings like feta cheese or tomatoes, add them now.

BakeBake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the bread is cooked through.

ServeRemove from the oven and let cool slightly. Garnish with fresh mint leaves if desired. Serve warm as a breakfast item or appetizer.
