  1. Prepare the bread
    Preheat your oven to 375°F (190°C). Slice the bolillo rolls in half lengthwise and spread each half with butter. Place them on a baking sheet, cut side up.
  2. Toast the bread
    Place the buttered bread in the preheated oven and toast until the edges begin to turn golden brown, about 5 minutes. Remove from the oven but keep the oven on.
  3. Season and spread the beans
    In a small bowl, mix the refried beans with cumin and oregano. Spread a generous layer of the seasoned refried beans on each toasted bread half, covering the surface completely.
  4. Add cheese and bake
    Sprinkle the shredded cheese evenly over the beans on each bread half. Return the bread to the oven and bake until the cheese is completely melted and starting to bubble, about 5-7 minutes.
  5. Prepare toppings
    While the molletes are baking, prepare your toppings. Make sure your pico de gallo is ready, slice the avocado, and have the crema and cilantro standing by for garnishing.
  6. Serve and garnish
    Remove the molletes from the oven. Top each one with a generous spoonful of pico de gallo, a few slices of avocado, a drizzle of Mexican crema, and a sprinkle of chopped cilantro. Serve immediately with lime wedges on the side.
