  1. Toast the bread
    Brush the sourdough slices with olive oil on both sides. Toast in a skillet over medium heat or in a toaster until golden brown and crisp around the edges, about 2-3 minutes per side.
  2. Prepare the hummus base
    Spread a generous layer of hummus (about 1/4 cup) onto each slice of toasted bread, creating a thick, even layer.
  3. Add the fresh vegetables
    Arrange the sliced cucumber and halved cherry tomatoes on top of the hummus. Distribute the Kalamata olives evenly among the four toasts.
  4. Finish with cheese and seasonings
    Sprinkle each toast with crumbled feta cheese. Dust with za'atar spice blend and add a light sprinkle of red pepper flakes if using.
  5. Garnish and serve
    Drizzle each toast with additional olive oil and fresh lemon juice. Top with chopped parsley, and season with salt and pepper to taste. Serve immediately while the bread is still warm and crisp.
