  1. Prepare the cheese sauce
    In a small saucepan over medium heat, melt the butter. Add the flour and stir continuously for 1-2 minutes to make a roux. Gradually whisk in the ale or stout until smooth, then reduce the heat to low and simmer for 2-3 minutes until slightly thickened.
  2. Add the flavorings
    Remove the pan from heat and stir in the grated cheese until melted and smooth. Add the Worcestershire sauce, mustard powder, cayenne pepper, and season with salt and black pepper. Allow to cool slightly, then beat in the egg yolks.
  3. Toast the bread
    Lightly toast the bread slices on both sides under a medium grill. Place the toasted bread on a baking sheet lined with parchment paper.
  4. Assemble and grill
    Generously spread the cheese mixture over one side of each toast, making sure to cover right to the edges to prevent burning. Place under a hot grill for 2-3 minutes, or until the cheese is bubbling and golden brown with some darker spots.
  5. Serve immediately
    Transfer the Welsh Rarebit to warm plates and serve immediately. For a traditional accompaniment, serve with a small side salad dressed with vinaigrette or a few slices of pickled onions.
