  1. Prepare the sauce
    In a bowl, whisk together 3 tablespoons soy sauce, mirin, tahini, rice vinegar, and chili oil until smooth. Set aside to allow flavors to meld while you prepare the other components.
  2. Cook the meat topping
    Heat a skillet over medium-high heat. Add the ground pork and cook until browned, about 5-6 minutes. Add the minced garlic, grated ginger, and white parts of the green onions. Cook for 1-2 minutes until fragrant. Add the remaining 1 tablespoon soy sauce and cook for another minute. Remove from heat.
  3. Prepare the eggs
    Bring a small pot of water to a boil. Gently lower eggs into the water and cook for exactly 6 minutes for soft-boiled eggs. Transfer immediately to an ice bath to stop the cooking process. Once cooled, peel the eggs carefully and slice in half lengthwise.
  4. Cook the noodles
    Bring a large pot of water to a boil. Cook the ramen noodles according to package instructions, usually 2-3 minutes for fresh noodles. Drain well and rinse briefly under cold water to stop the cooking process and remove excess starch.
  5. Assemble the mazemen
    Divide the sauce among four serving bowls. Add the drained noodles to each bowl and toss well to coat with the sauce. Top each bowl with a portion of the cooked pork mixture.
  6. Add the toppings
    Arrange two egg halves on top of each bowl. Sprinkle with the green parts of the green onions, nori strips, and toasted sesame seeds. Serve immediately, instructing diners to mix everything together before eating.
