  1. Prepare the spreads
    In a small bowl, mix the mayonnaise and pesto together until well combined. Set aside. This will be your sandwich spread.
  2. Toast the bread
    Lightly toast all 12 slices of sourdough bread until just golden. Allow to cool slightly before assembling the sandwiches.
  3. Assemble the first layer
    Spread the pesto-mayonnaise mixture on one side of 8 bread slices. Layer 4 slices with prosciutto, fresh mozzarella, and tomato slices. Drizzle with a small amount of olive oil and top with basil leaves.
  4. Create the second layer
    Place another slice of bread (spread-side down) on top of each assembled stack. Spread more pesto-mayonnaise on the top of these slices, then layer with mortadella, genoa salami, roasted red peppers, and arugula.
  5. Complete the sandwich
    Top each sandwich with the remaining bread slices, spread-side down. Press gently to compress the sandwich.
  6. Cut and serve
    Using a sharp knife, cut each sandwich diagonally into quarters. Secure each quarter with a decorative toothpick. Arrange on a serving platter and serve immediately.
