  1. Make the lavender honey syrup
    In a small saucepan, combine water, honey, and dried lavender buds. Heat over medium-low heat, stirring until honey dissolves completely. Let simmer for 2 minutes, then remove from heat. Allow to steep for 5 minutes, then strain to remove lavender buds. Add vanilla extract and a pinch of salt, then set aside.
  2. Prepare the espresso
    Brew your espresso shots using an espresso machine, or prepare strong coffee using your preferred brewing method. Set aside while preparing the milk.
  3. Steam the milk
    Pour milk into a saucepan and heat over medium heat until hot but not boiling, or use a milk frother to steam the milk until it reaches a temperature of about 150°F (65°C) with a light layer of foam on top.
  4. Assemble the latte
    Divide the lavender honey syrup between two mugs (about 2 tablespoons per mug). Pour the hot espresso or coffee over the syrup and stir to combine. Slowly pour the steamed milk into each mug, holding back the foam with a spoon. Top with the reserved foam and garnish with a few dried lavender buds if desired.
