  1. Prepare the tuna
    Ensure your ahi tuna is sashimi-grade and very fresh. Cut the tuna into uniform 3/4-inch cubes, removing any dark parts or sinew. Place the cubes in a large mixing bowl and set aside.
  2. Rehydrate the seaweed
    Place the dried limu seaweed in a small bowl with cool water for about 5 minutes until softened. Drain well and chop into small pieces.
  3. Create the marinade
    In a separate bowl, combine the soy sauce, sesame oil, Hawaiian sea salt, and grated ginger. Mix well until the salt is dissolved.
  4. Combine ingredients
    Add the sliced Maui onion, green onions, rehydrated limu seaweed, and red pepper flakes (if using) to the bowl with the tuna cubes.
  5. Mix and marinate
    Pour the marinade over the tuna mixture and gently fold everything together using a large spoon or your hands. Be careful not to mash the tuna pieces. Sprinkle with sesame seeds and fold once more to incorporate.
  6. Chill and serve
    Cover the bowl and refrigerate for at least 15 minutes (or up to 2 hours) to allow the flavors to develop. Just before serving, gently fold in the diced avocado if using. Serve cold.
