Prepare the salmonIf using store-bought salted salmon, rinse thoroughly under cold water to remove excess salt. If starting with fresh salmon, rub with sea salt and refrigerate for at least 2 hours, then rinse well. Dice the salmon into small 1/4-inch cubes and place in a large mixing bowl.

Prepare the vegetablesDice the tomatoes into small cubes, removing excess seeds and juice. Finely dice the Maui onion. Thinly slice the green onions. Chop the cilantro. Add all vegetables to the bowl with the salmon.

Mix the saladGently combine all ingredients, being careful not to mash the tomatoes. Add lime juice, salt to taste, and red pepper flakes if using. Toss everything together until well incorporated.

Chill before servingCover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to meld together. The longer it sits, the more the flavors will develop.

Final seasoningBefore serving, taste and adjust seasoning if needed. Add additional salt or lime juice according to preference. Garnish with extra cilantro if desired.
