Miso Glazed Black Cod
Tender fish with sweet-savory miso marinade, Japanese delicacy
Ingredients
Instructions
-
Prepare the miso marinadeIn a medium bowl, whisk together the white miso paste, mirin, sake, brown sugar, soy sauce, rice vinegar, grated ginger, and minced garlic until smooth and well combined.
-
Marinate the fishPlace the black cod fillets in a glass or ceramic baking dish. Pour the miso marinade over the fish, turning to coat all sides. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight (up to 48 hours for stronger flavor).
-
Prepare for cookingPreheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Remove the fish from the marinade, gently wiping off excess marinade with your fingers, but leaving a thin layer on the fish.
-
Cook the fishPlace the fish skin-side down on the prepared baking sheet. Bake for 15-20 minutes, until the fish is opaque and flakes easily with a fork. For additional caramelization, broil for the last 2-3 minutes until the top is lightly browned and bubbling.
-
Serve the dishTransfer the cod to serving plates. Sprinkle with sliced green onions and toasted sesame seeds. Serve immediately with lemon wedges on the side and a side of steamed rice or vegetables if desired.
