  1. Prepare the miso marinade
    In a medium bowl, whisk together the white miso paste, mirin, sake, brown sugar, soy sauce, rice vinegar, grated ginger, and minced garlic until smooth and well combined.
  2. Marinate the fish
    Place the black cod fillets in a glass or ceramic baking dish. Pour the miso marinade over the fish, turning to coat all sides. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight (up to 48 hours for stronger flavor).
  3. Prepare for cooking
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Remove the fish from the marinade, gently wiping off excess marinade with your fingers, but leaving a thin layer on the fish.
  4. Cook the fish
    Place the fish skin-side down on the prepared baking sheet. Bake for 15-20 minutes, until the fish is opaque and flakes easily with a fork. For additional caramelization, broil for the last 2-3 minutes until the top is lightly browned and bubbling.
  5. Serve the dish
    Transfer the cod to serving plates. Sprinkle with sliced green onions and toasted sesame seeds. Serve immediately with lemon wedges on the side and a side of steamed rice or vegetables if desired.
