Instructions

  1. Prepare the guacamole
Scoop the avocado flesh into a medium bowl. Add the lime juice and mash with a fork until somewhat smooth but still chunky. Stir in the diced red onion, tomatoes, jalapeño, cilantro, cumin, and salt. Mix well and adjust seasoning to taste.
  2. Toast the bread
Toast the bread slices until golden brown and crisp. This can be done in a toaster, toaster oven, or under a broiler for about 2-3 minutes per side. Lightly brush each slice with olive oil after toasting.
  3. Assemble the toast
Spread a generous layer of guacamole (about 2-3 tablespoons) onto each slice of toasted bread. The layer should be about 1/2 inch thick for the best flavor balance.
  4. Add toppings
Sprinkle each toast with a pinch of red pepper flakes if using, and top with crumbled feta cheese if desired. For a more substantial meal, you can also add sliced radishes, microgreens, or a poached egg on top.
  5. Serve immediately
Guacamole toast is best enjoyed fresh. Serve immediately after assembly to enjoy the contrast between the warm, crispy toast and the cool, creamy guacamole.
