  1. Prepare the avocado mixture
    In a medium bowl, mash the avocados with a fork until mostly smooth but still with some texture. Stir in the chipotle paste, lime juice, cumin, salt, and black pepper. Mix well to combine all flavors.
  2. Add fresh elements
    Fold in the diced red onion and chopped cilantro into the avocado mixture, reserving some cilantro for garnish. Taste and adjust seasoning if needed.
  3. Toast the bread
    Drizzle both sides of the sourdough bread slices with olive oil. Toast in a skillet over medium heat until golden brown and crispy on both sides, about 2 minutes per side. Alternatively, use a toaster and then brush with olive oil.
  4. Assemble the toast
    Divide the chipotle avocado mixture evenly between the toasted bread slices, spreading it generously. Top with toasted pumpkin seeds, reserved cilantro, a sprinkle of red pepper flakes if using, and a light drizzle of olive oil.
  5. Serve immediately
    For the best texture and flavor, serve the toast right away while the bread is still warm and crispy. If desired, finish with a squeeze of fresh lime juice and an extra pinch of sea salt.
