
Black Bean Avocado Toast

Prepare the black beansHeat 1 tablespoon olive oil in a medium saucepan over medium heat. Add ¾ of the diced red onion and cook until softened, about 3 minutes. Add garlic, cumin, smoked paprika, and cayenne (if using) and cook for 30 seconds until fragrant. Add black beans and ¼ cup water, season with salt and pepper, and simmer for 5 minutes. Mash slightly with a fork while keeping some texture.

Make the avocado spreadIn a bowl, mash the avocados with a fork. Add half the lime juice, half the lime zest, remaining diced red onion, half the cilantro, salt, and pepper. Mix until well combined but still slightly chunky.

Toast the breadBrush both sides of bread slices with remaining olive oil. Toast in a toaster, skillet, or under a broiler until golden and crisp, about 2-3 minutes per side.

Assemble the toastSpread a generous layer of avocado mixture on each toast slice. Top with the warm black bean mixture, dividing evenly among the four slices.
