  1. Prepare the Pico de Gallo
    In a medium bowl, combine the diced tomatoes, red onion, minced jalapeño, and chopped cilantro. Add the lime juice, 1 tablespoon of olive oil, salt, and pepper. Stir gently to combine. Let the mixture rest for 10 minutes to allow the flavors to meld.
  2. Toast the bread
    Brush both sides of the bread slices with olive oil. Heat a large skillet over medium-high heat or preheat a grill pan. Toast the bread for about 2 minutes on each side until golden brown and crisp.
  3. Prepare the toast base
    While the toast is still warm, rub each slice with the cut side of the garlic clove. This will impart a subtle garlic flavor to the bread. Drizzle the remaining tablespoon of olive oil over the toasts.
  4. Assemble the toasts
    Arrange the avocado slices evenly on each piece of toast. Using a slotted spoon to drain excess liquid, generously top each toast with the pico de gallo mixture.
  5. Serve immediately
    Season with an additional sprinkle of salt and pepper if desired. Serve immediately while the toast is still warm and crisp. Garnish with extra cilantro leaves if desired.
