Prepare the Pico de GalloIn a medium bowl, combine the diced tomatoes, red onion, minced jalapeño, and chopped cilantro. Add the lime juice, 1 tablespoon of olive oil, salt, and pepper. Stir gently to combine. Let the mixture rest for 10 minutes to allow the flavors to meld.

Toast the breadBrush both sides of the bread slices with olive oil. Heat a large skillet over medium-high heat or preheat a grill pan. Toast the bread for about 2 minutes on each side until golden brown and crisp.

Prepare the toast baseWhile the toast is still warm, rub each slice with the cut side of the garlic clove. This will impart a subtle garlic flavor to the bread. Drizzle the remaining tablespoon of olive oil over the toasts.
