  1. Prepare the tofu
    Press the tofu between paper towels with a heavy object for 15-20 minutes to remove excess moisture. Cut into 1-inch cubes and toss gently with cornstarch until evenly coated.
  2. Cook the tofu
    Heat vegetable oil in a large non-stick skillet over medium-high heat. Add tofu cubes in a single layer and cook for 3-4 minutes per side until golden and crispy on all sides. Work in batches if necessary to avoid overcrowding.
  3. Make the glaze
    In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes (if using). Mix until well combined.
  4. Glaze the tofu
    Reduce heat to medium-low and pour the glaze over the crispy tofu. Add the sesame seeds and gently toss to coat. Allow the sauce to simmer for 3-5 minutes until it thickens and coats the tofu.
  5. Reduce the sauce
    Continue cooking for another 2-3 minutes, stirring occasionally, until the sauce has reduced and becomes sticky, clinging to the tofu cubes. Be careful not to burn the glaze.
  6. Serve
    Transfer to a serving plate, sprinkle with additional sesame seeds and sliced green onions. Serve hot over steamed rice or with your favorite vegetables.
