
Curry Beef Burritos
Spiced beef with curry flavors wrapped in warm tortillas

Prepare the spice mixtureIn a small bowl, combine the curry powder, cumin, turmeric, and cayenne pepper. Mix well and set aside.

Cook the beefHeat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6-7 minutes. Drain excess fat if necessary.

Add aromatics and spicesAdd the diced onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until the onion is translucent. Add the sliced bell pepper and cook for another 2 minutes. Stir in the spice mixture and cook for 1 minute until fragrant.

Simmer the curry beefPour in the beef broth and stir well to combine. Reduce heat to low and simmer for 10 minutes, or until most of the liquid has been absorbed and the mixture has thickened. Season with salt and pepper to taste.

Warm the tortillasWhile the beef is simmering, warm the flour tortillas according to package instructions or in a dry skillet for about 30 seconds per side.

Assemble the burritosLay a tortilla flat on a work surface. Spoon about 1/4 cup of cooked rice in the center of the tortilla. Top with approximately 1/2 cup of the curry beef mixture. Add a dollop of Greek yogurt and sprinkle with fresh cilantro.

Fold and serveFold in the sides of the tortilla, then roll from the bottom up to form a burrito. Repeat with the remaining tortillas and filling. Serve immediately with lime wedges on the side for squeezing over the burritos.
