  2. Warm the tortillas
    Heat the flour tortillas in a dry skillet for about 30 seconds on each side or microwave them covered with a damp paper towel for 20-30 seconds until warm and pliable.
  3. Prepare the filling
    In a small bowl, combine diced cucumber, halved cherry tomatoes, sliced red onion, and chopped kalamata olives to create a fresh vegetable mixture.
  4. Assemble the burritos
    Lay each tortilla flat and spread 2 tablespoons of tzatziki sauce in the center. Add a portion of the cooked gyro meat, followed by the vegetable mixture. Sprinkle with crumbled feta cheese.
  5. Roll the burritos
    Fold in the sides of each tortilla, then roll from the bottom up, tucking in the sides as you go to create a secure burrito. If needed, use a toothpick to hold them together.
  6. Final heating (optional)
