Tandoori Beef Fajitas
Spiced beef strips with roasted peppers in warm tortillas
Ingredients
Instructions
-
Marinate the beefIn a large bowl, combine tandoori paste, yogurt, 1 tablespoon vegetable oil, and lemon juice. Add sliced beef and toss to coat evenly. Cover and refrigerate for at least 20 minutes or up to 4 hours for deeper flavor.
-
Prepare the vegetablesHeat the remaining tablespoon of oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions. Sauté for 5-7 minutes until softened and slightly charred at the edges. Add minced garlic, cumin, and garam masala. Cook for another minute until fragrant. Transfer to a plate and cover to keep warm.
-
Cook the beefIn the same skillet, increase heat to high. Add the marinated beef in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 2-3 minutes per side until beef is browned and cooked through but still tender. Return the vegetables to the skillet and toss with the beef to combine flavors.
-
Warm the tortillasHeat the tortillas in a dry skillet for 30 seconds on each side, or wrap them in foil and warm in a 300°F (150°C) oven for 5 minutes. Alternatively, microwave them covered with a damp paper towel for 30 seconds.
-
Assemble the fajitasPlace a portion of the beef and vegetable mixture in the center of each warm tortilla. Top with fresh cilantro and a dollop of raita or sour cream. Serve immediately with lime wedges on the side for squeezing over the filling.
