  1. Marinate the beef
    In a large bowl, combine tandoori paste, yogurt, 1 tablespoon vegetable oil, and lemon juice. Add sliced beef and toss to coat evenly. Cover and refrigerate for at least 20 minutes or up to 4 hours for deeper flavor.
  2. Prepare the vegetables
    Heat the remaining tablespoon of oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions. Sauté for 5-7 minutes until softened and slightly charred at the edges. Add minced garlic, cumin, and garam masala. Cook for another minute until fragrant. Transfer to a plate and cover to keep warm.
  3. Cook the beef
    In the same skillet, increase heat to high. Add the marinated beef in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 2-3 minutes per side until beef is browned and cooked through but still tender. Return the vegetables to the skillet and toss with the beef to combine flavors.
  4. Warm the tortillas
    Heat the tortillas in a dry skillet for 30 seconds on each side, or wrap them in foil and warm in a 300°F (150°C) oven for 5 minutes. Alternatively, microwave them covered with a damp paper towel for 30 seconds.
  5. Assemble the fajitas
    Place a portion of the beef and vegetable mixture in the center of each warm tortilla. Top with fresh cilantro and a dollop of raita or sour cream. Serve immediately with lime wedges on the side for squeezing over the filling.
