  1. Prepare the kofta mixture
    In a large bowl, combine the ground lamb, grated onion, minced garlic, chopped mint, parsley, cumin, coriander, smoked paprika, cinnamon, salt, and black pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
  2. Form the kofta
    Divide the lamb mixture into 12 equal portions. Shape each portion into an oval patty about ½-inch thick. If using skewers, press the meat around the skewer into a sausage shape. Refrigerate for 15 minutes to firm up.
  3. Cook the kofta
    Heat a grill pan or skillet over medium-high heat. Cook the kofta for 3-4 minutes per side until nicely browned and cooked through to an internal temperature of 160°F (71°C). Alternatively, grill on a barbecue for a more authentic flavor.
  4. Warm the tortillas
    While the kofta is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in foil and heat in a 350°F (175°C) oven for 5 minutes.
  5. Prepare the toppings
    While the kofta and tortillas are cooking, prepare the toppings by dicing the cucumber and quartering the cherry tomatoes. Place the tzatziki sauce in a small bowl for serving.
  6. Assemble the tacos
    Place a warm tortilla on a plate and add one kofta patty. Top with a spoonful of tzatziki sauce, diced cucumber, and quartered cherry tomatoes. Repeat with the remaining ingredients.
