  2. Mix the fruit filling
    In a large bowl, combine the sliced apples and cranberries. Add the granulated sugar, cornstarch, cinnamon, and nutmeg. Sprinkle with lemon juice and vanilla extract, then toss until all fruit is evenly coated. Transfer the mixture to the prepared baking dish.
  3. Make the crisp topping
    In a medium bowl, combine the rolled oats, flour, brown sugar, and salt. Mix well. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the chopped nuts if using.
  4. Assemble and bake
    Sprinkle the crumb topping evenly over the fruit mixture, covering it completely. Place the baking dish on a rimmed baking sheet to catch any potential overflow during baking.
  5. Bake until golden
    Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges. If the topping browns too quickly, loosely cover with aluminum foil.
