Instructions

  1. Prepare the baking pan
Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment paper, leaving some overhang for easy removal.
  2. Mix dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Combine wet ingredients
In a separate medium bowl, whisk together the orange juice, orange zest, eggs, melted butter, and vegetable oil until smooth and well blended.
  4. Form the batter
Pour the wet ingredients into the dry ingredients. Stir just until combined - do not overmix. The batter will be thick and slightly lumpy.
  5. Add cranberries and nuts
Gently fold in the chopped cranberries and walnuts (if using) until evenly distributed throughout the batter.
  6. Bake the bread
Pour the batter into the prepared loaf pan, spreading evenly. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
  7. Cool and serve
Allow the bread to cool in the pan for 10 minutes, then remove from the pan and let cool completely on a wire rack before slicing. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
