
Apple Cinnamon Bread

Prepare the baking panPreheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line with parchment paper with overhang on the sides for easy removal.

Mix dry ingredientsIn a medium bowl, whisk together the flour, baking soda, salt, 1 teaspoon of cinnamon, and nutmeg until well combined.

Prepare wet ingredientsIn a large bowl, beat eggs, granulated sugar, and brown sugar together until light and fluffy, about 2 minutes. Add the oil, Greek yogurt, and vanilla extract and mix until well incorporated.

Combine wet and dry mixturesGradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix or the bread will become dense.

Prepare cinnamon applesIn a small bowl, toss the diced apples with the remaining 1 teaspoon of cinnamon until evenly coated. Gently fold the cinnamon-coated apples and walnuts (if using) into the batter.

Bake the breadPour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
