  1. Prepare the baking pan
    Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line with parchment paper with overhang on the sides for easy removal.
  2. Mix dry ingredients
    In a medium bowl, whisk together the flour, baking soda, salt, 1 teaspoon of cinnamon, and nutmeg until well combined.
  3. Prepare wet ingredients
    In a large bowl, beat eggs, granulated sugar, and brown sugar together until light and fluffy, about 2 minutes. Add the oil, Greek yogurt, and vanilla extract and mix until well incorporated.
  4. Combine wet and dry mixtures
    Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix or the bread will become dense.
  5. Prepare cinnamon apples
    In a small bowl, toss the diced apples with the remaining 1 teaspoon of cinnamon until evenly coated. Gently fold the cinnamon-coated apples and walnuts (if using) into the batter.
  6. Bake the bread
    Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
  7. Cool and serve
    Allow the bread to cool in the pan for 15 minutes, then remove from the pan and let cool completely on a wire rack before slicing. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
