
Plum Crumble

Prepare the plumsWash the plums thoroughly. Cut them in half, remove the pits, and quarter them. Place the plum pieces in a large mixing bowl.

Season the fruitAdd granulated sugar, lemon juice, vanilla extract, cornstarch, and 1/4 teaspoon cinnamon to the plums. Toss gently until the plums are evenly coated. Transfer the mixture to a 9x13 inch baking dish, spreading it out evenly.

Prepare the crumble toppingIn a medium bowl, combine flour, rolled oats, brown sugar, 1/2 teaspoon cinnamon, nutmeg, and salt. Mix well with a fork or whisk to combine.

Add butter to the toppingAdd the cold cubed butter to the dry mixture. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Assemble the crumbleSprinkle the crumble mixture evenly over the plum filling, covering the fruit completely. Press down lightly to compact the topping slightly.

Bake the crumblePreheat your oven to 375°F (190°C). Place the baking dish on a sheet pan (to catch any bubbling juices) and bake for 35-40 minutes, until the topping is golden brown and the fruit filling is bubbling around the edges.
