
Berry Crumble Pie
Sweet-tart berries under a crisp buttery oat topping

Prepare the crustPreheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish, crimping the edges decoratively. Refrigerate while preparing the filling and topping.

Make the berry fillingIn a large bowl, gently toss the mixed berries with granulated sugar, cornstarch, lemon juice, lemon zest, and salt until berries are evenly coated. Let stand for 15 minutes to release juices.

Prepare the crumble toppingIn a medium bowl, combine flour, rolled oats, brown sugar, and cinnamon. Add the cold cubed butter and use your fingers or a pastry cutter to work the mixture until it resembles coarse crumbs with some pea-sized pieces remaining.

Assemble the piePour the berry mixture into the chilled pie crust, spreading evenly. Sprinkle the crumble topping over the berry filling, covering it completely and pressing down lightly.

Bake the piePlace the pie on a baking sheet to catch any drips. Bake for 20 minutes, then reduce temperature to 350°F (175°C) and continue baking for 30-35 minutes more, until the filling is bubbling and the topping is golden brown. If the edges brown too quickly, cover them with aluminum foil.

Cool and serveRemove from oven and let cool on a wire rack for at least 2 hours before serving to allow the filling to set. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
