Instructions

  1. Prepare the pie crust
Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish, trim excess dough, and crimp edges. Refrigerate while preparing the filling.
  2. Make the apple filling
In a large bowl, combine sliced apples, granulated sugar, 2 tablespoons flour, lemon juice, cinnamon, nutmeg, and salt. Toss gently until apples are evenly coated. Let stand for 10 minutes to allow juices to release.
  3. Prepare the crumble topping
In a medium bowl, mix 1 cup flour and brown sugar. Using a pastry cutter or your fingers, cut in the cold butter until mixture resembles coarse crumbs. Stir in rolled oats until combined.
  4. Assemble the pie
Pour the apple filling into the chilled pie crust, arranging the slices evenly. Sprinkle the crumble topping over the apples, covering them completely.
  5. Bake the pie
Place the pie on a baking sheet to catch any drips. Bake for 45-50 minutes, until the filling is bubbling and the crumble topping is golden brown. If the edges brown too quickly, cover them with aluminum foil.
  6. Cool and serve
Remove from oven and cool on a wire rack for at least 2 hours before slicing. This allows the filling to set properly. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
