
Peach Cobbler

Prepare the peachesPreheat oven to 375°F (190°C). In a large bowl, combine the sliced peaches, 1/2 cup of granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Gently toss until all peaches are evenly coated. Pour the mixture into a 9x13 inch baking dish.

Make the cobbler batterIn a medium bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Add boiling waterPour the boiling water into the flour mixture and stir just until combined. The batter will be thick and slightly lumpy. Do not overmix.

Assemble and bakeDrop spoonfuls of the batter over the peach mixture, covering as much of the surface as possible. Sprinkle the cinnamon-sugar mixture evenly over the top. Bake for 40-45 minutes, until the topping is golden brown and the peach filling is bubbling around the edges.

Cool and serveRemove from the oven and let cool for at least 15 minutes before serving. The cobbler can be served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
